A jar-full of love

With Valentine’s Day around the corner, it’s hard not to feel pressured to ‘do something’ for your loved one.  Whether you’re a big or small gift giver, I reckon the best way to make someone feel special is to create something for them! (This either makes me a massive tight arse, or just a warm and fuzzy personal-gift-giver?)

So, feeling very generous, I am going to share my never-fail-happiness-recipe for Hedgehog slice.  This recipe was one of my Grandmother’s best, and although I may have tweaked it a little (i.e., more chocolate and less butter & sugar), it’s an absolute ripper. You should feel very privileged – this has been under lock and key for generations (shhh!)


What you will need:

250g butter

1 cup caster sugar

½ cup cocoa (raw, organic & fairtrade is best!)

3 large eggs

1 teaspoon vanilla

1 ½ packets of Arnott’s Marie Biscuits (or Milk Arrowroot if you can’t find the good old Maries)

First up – slowly melt your butter with the sugar over a low heat in a saucepan.  Be careful & patient here – no one likes crystalised sugar which is exactly what you’ll get if you are all ‘Speedy Gonzalez‘ at this step.  Slow & steady wins the race!

While you are waiting, you can get started on breaking up your biscuits.  Now, there is a bit of contention in our family about how far one must go here. Personally, I like a chunky hedgehog so I avoid the processor and do it by hand (i.e., with a wooden spoon, potato masher, any hard thingy you have handy).  Usually this leaves me with some good solid pieces along with just the right amount of fine biscuit.  Perfecto.

Take the butter mixture off the heat once the sugar has dissolved (trust me, it will probably never get completely dissolved. I don’t know why but I just can never get it to that point – probably why my Grandmother had a wad of extra butter in her original recipe.  But I prefer a little less butter as this usually means I feel a little less guilty.

Now stir in your cocoa.  If you are using a supermarket brand but can handle a rich chocolate, you will need to add a little more than I have suggested here (maybe 1 or 2 tablespoons). In my opinion, that generic stuff is really crap so if you can manage to get yourself to a health food store or deli, try the raw organic cocoa – you will never believe how good your chocolate recipes could be! Plus it apparently has twice the amount of anti-oxidants compared to traditional cocoa. What a chocolately star!

Allow the mixture to cool for a bit before you stir in your 3 eggs, because along with crystalised sugar, no one likes scrambled egg in their chocolate slice!  Throw in your vanilla and you are now good to mix in your biscuit.

Stir it thoroughly making sure all those biscuit bits are well covered in chocolate, and pour it into a slice tin – any old thing will do.  Who cares how thick or thin it is – it will taste the same! Press it down firmly with the back of a spoon.

Pop it in to the fridge for a few hours and allow to set.

I found a super cute old jar (I seem to have developed a bit of an old-jar addiction (worthy of a whole other blog post one day…). Nothing says ‘love’ more than a gift finished off with a ribbon – red of course.
